Gluten-free doesn't have to be just "okayyyyyy..."
I think people settle for a lot less than they have to when it comes to gluten free.

I can't eat gluten. So over the years I've devoted my time in the kitchen to come up with the BEST gluten free recipes for my family and friends. 💛
One of my specialties the last several years has been my cookies. I've worked hard to get gluten free cookies to the point at where my friends wouldn't know that they were gluten free.
Yes, I've had my full share of failed batches, but through the failed recipes I've come to understand a lot more about how gluten free flours work. (Also, just don't ask my family how many times I've burned things cause I got caught up on another project.😬🙃)
I love my 800-page food science book and wish it covered more on gluten free flours, but it doesn't. So by trial and error I've learned several very important things:
- always use a mix of GF flours
- rice flour is always a safe flour base for both taste & texture
- xanthan gum helps add the elasticity "gluten" usually gives to a recipe
- tapioca can be gummy if you use too much, but the flavor is good
- sometimes the multiple steps in a gluten-recipe don't matter at all for GF...
- and other times they do
My Sourdough Journey
For several years now I've wanted to jump in and learn the art of sourdough. But it always seemed so involved and intimidated me. It just seemed like people worked so hard to grow their starter and make their bread. Even just having a starter seemed like having a pet on the kitchen counter that needed timely care.
I knew one day I wanted to take the plunge and master the art of gluten free sourdough but it wasn't until I heard of a "dry starter" from Shaye Elliott that I decided to try.
After building a gluten-free starter from scratch the first batch of pancakes were well worth it. 🤤
Lots of delicious pizza crusts down, I knew I needed to jump into bread and I'm so glad I finally did!
The first loaf I made was a complete failure. It tasted so bad I fed it to my pigs, so at least something loved it. 🐷
But I've worked on it (and read my food science book) and I'm so happy with the gluten free loaf I'm currently making!
And now, I'm excited to share my best gluten free sourdough and treats with you.
